How to Make Spicy Pickles:
Start with fresh pickling cucumbers. Preferably from your garden or local Farmers Market. The key to having crisp pickles is canning them shortly after picking. The fresher the cucumber the crisper the pickle.
Add amazing and crazy spices and vegetables to make your pickles spicy. The key to extra spicy pickles is fresh peppers and dried red pepper flakes.
Fresh Dill is very important. Dill is an easy ingredient to grow at home or you can buy it for couple of dollars at your local Farmers Market.
Pickling liquid I usually purchases a pre-made package at my local farm supple store. Just make sure when you pour the liquid in that you remove all the air bubbles. A butter knife is the perfect tool for this job. Sharper knifes might cut the pickles.
It never hurts to have a good man helping you in the kitchen. This guy loves his spicy pickles.
Remember to add lots of extra spice.
The key to canning anything is HOT HOT HOT. Hot liquid, Hot very clean jars, Hot Lids, Hot Water to boil them in. For pickles boil the quart jars for 10 minutes and then let them cool. Last night we made 20 Jars of Spicy Pickles. Every jar sealed but we were careful to wipe down the rims, our jars were very hot and clean, pickling liquid was hot, and the canning water was boiling.
